Thanos Prunarus opened Baba au Rum over fifteen years ago with a simple premise: bring proper cocktail culture to Athens, built around an obsessive love of rum. A former musician turned bartender who cut his teeth in London in the late nineties, Prunarus has turned this Syntagma spot into one of the city's most enduring bars. Eleven consecutive years on the World's 50 Best list doesn't happen by accident.
The space has a tiki spirit without the clichéd palm trees and plastic parrots. Inside, moody red-toned lighting washes over colourful walls and a bar backed by an extraordinary display: over 400 rums lined up alongside barrels and bottles from every sugarcane-producing corner of the world. On warm evenings, the pedestrianised sidewalk fills with tables, and by Thursday night every seat is taken.
The drinks programme is where Baba au Rum earns its reputation. The menu takes familiar templates (a Negroni, a Ti Punch, a Paloma) and filters them through that rum-soaked lens without losing what makes the originals work. The Buccaneer's Negroni swaps gin for aged rum and deepens the profile with vetiver and tonka bean, adding a warm tropical sweetness that complements rather than overwhelms the bitter backbone. The Spicy Baba No.7, the bar's signature since 2010, is an easy-drinking crowd-pleaser of aged rum, ginger, lime and cranberry that explains why they've poured over 130,000 of them. For the adventurous, the experimental section pushes further. The Unapologetic Skyline pairs pisco with feta cheese, grape and elderflower, a combination that sounds improbable but lands with surprising elegance. Even for drinkers who think they don't like rum, the balance achieved across the menu makes converts.
Service is the one area where Baba au Rum stumbles. Even on a moderately busy evening, drinks took longer than expected and the greeting was functional rather than warm. The team feels stretched thin. It's a shame, because the bartenders clearly know their craft and are happy to guide you through the rum list when they have a moment.
At €11-12 per cocktail, the value is hard to argue with. This is a bar that doesn't try to be something it isn't: no white-glove ceremony, no elaborate theatrics. It's a neighbourhood institution that happens to have a world-class rum collection and a cocktail programme creative enough to justify its place among the best. Come early on a weeknight, grab a sidewalk table, and let the rum do the talking.
