Instructions
- Cut the lime half into wedges and add to a highball glass.
- Add the mint leaves and simple syrup to the glass.
- Gently muddle the mint and lime together, press just enough to release the oils without shredding the mint.
- Add the fresh lime juice.
- Fill the glass with crushed ice.
- Top with soda water.
- Stir gently from bottom to top to mix the ingredients.
- Top with more crushed ice if needed.
- Garnish with a mint sprig and lime wheel.

The Virgin Mojito (also called a "Nojito") is a non-alcoholic version of Cuba's famous Mojito cocktail. It's perfect for hot summer days, designated drivers, or anyone looking for a refreshing drink without alcohol.
The key to a great Virgin Mojito is gentle muddling, you want to bruise the mint leaves to release their essential oils, not tear them apart. Over-muddling can make the drink bitter. Use fresh mint (not dried) for the best flavor, and don't skip the crushed ice, it's essential for the proper dilution and texture.
For a twist, try adding fresh fruit like strawberries, raspberries, or watermelon during the muddling step.
