Thiago Bañares opened Tan Tan in 2015 as a Pinheiros noodle bar with a three-seat drinking corner, added mostly because he liked cocktails. Within the first week a queue had formed and drinks were being passed out through the window. A decade on, this is the most awarded bar in Brazil and the country's only entry in the World's 50 Best, and it still runs at izakaya scale: around two dozen seats, a wooden counter that swallows the bartenders' stations, an open kitchen sending noodles out to the other half of the room. The night we visited it was full and buzzy without ever tipping into uncomfortable, the kind of noise you lean into rather than shout over.
The menu, Perspectiva, is head bartender Caio Carvalhaes reading Brazil's five regions through sensory profiles, pairing ingredients like tucupi and cupuaçu, cashew and malagueta, corn and baru, mate and apple. The Cornfield (R$78) is the drink to order: Johnnie Walker Black, aged rum, baru infusion and popcorn dipped in white chocolate, subtle but legible, every ingredient exactly where you can find it. The Pillow Top (R$45), on aged rum and cachaça with fig cordial, coconut and cashew shrub, and the Libertine (R$45), reposado tequila with jaboticaba vermouth, Drambuie, fig leaf and yuzu, are both carefully balanced. The Caipora (R$57) is the wobble: cachaça, cupuaçu and black tucupi soda that leans hard into sourness, and if you are new to this style of drinking it lands as a shock rather than a surprise. Two zero-proof serves and a sherry-heavy classics list starting at R$35 round out a generous card.
Service is the quiet star. With every seat taken, the team stayed fast, organized and genuinely friendly, remembering our requests without a single reminder.
The caveats are modest. Even with no queue outside, an indoor table took half an hour, prices sit at the premium end for São Paulo, and the bar closes on the last Sunday of each month, so a Tock booking is the safer play. One drink out of four missing its mark keeps Tan Tan shy of the very top tier, but this is an excellent bar with a point of view entirely its own, and an easy recommendation in Pinheiros.
